We select tender, lean cuts of pork and then we cut and grind them to just the right texture. After adding the perfect sprinkling of spices and seasonings, we let this blend sit for 24-48 hours to develop its characteristic flavor. When it's ready, the meat is stuffed into edible casings and placed in our smokehouse. It takes several days of hickory wood smoking, but we won't have it any other way.
